Ingredients

 
2 handfull gram flour ( kadalai maav )
 
1 handfull rice flour ( arisi maav )
 
1 tsp all purpose flour (maida)
 
1 tsp ghee
 
1 pinch baking soda
 
1 count red or yellow onion chopped lenghtwise
 
4 count finely chopped green chillies
 
a few corrainder and curry leaves
 
salt as per taste
 
oil to fry

Directions

* In a big bowl put gram flour, rice flour, al purpose flour, salt, soda and ghee and mix all.

* Now add the chopped red onion which are cut lengthwise and add finely chopped green chillies, corrainder and curry leaves.

* Just sprinkle water and mix by hand so that the onions are coated with the flours.

* Heat oil in a pan and put the onions here and there in oil as shown. Remove after they are golden brown in both sides.

* Serve hot.

Yes, if you add the rice flour, the pakoras will be very crispy and the all purpose flour will give a good texture.

I make this pakoda with only Besan or Gram Flour, I have never tried using rice flour and all-purpose flour too. Does it gives the pakoras a better texture?
