1 In a pan, heat butter.
2 Add onions and gently fry until transparent (or combine butter and onion in a dish, microwave on HIGH 2 minutes).
3 Remove onion with a slotted spoon.
4 Remove sausage meat from casings.
5 In a bowl, mix thoroughly with onion, cooked potato, egg, pepper and parsley.
6 Use for stuffing a 4 lb (2 kg) chicken or other poultry.
