Onion Shells Jardiniere Recipe

Ingredients
2 large onions, peeled
2 tbsp (30 ml) sugar
1 cup (250 ml) water
1/4 cup (60 ml) spinach, chopped, cooked
1/2 cup (125 ml) mixed vegetables (com kernels, diced carrots and peas), cooked
2 tbsp (30 ml) butter
Directions
– Preheat oven to 400 °F (205 °C).
– Slice onions in 2 along the width and set aside.
– In a saucepan, place onion halves, then add sugar and pour water over onions. Cover and cook over low heat for 10 minutes, then drain.
– Scoop inner layers out of onions and stuff each half with layer of spinach, then mixed vegetables. Place a pat of butter over each stuffed onion half and bake for 10 minutes.
