Ingredients
| Mild Bermuda onions - 1 large or 2 medium sized | ||
| Cold cooked ham or pork - 1 1/2 cups, shredded | ||
| Wine vinegar or cider vinegar | ||
| Parsley | 2 Tablespoon, finely chopped | |
| Olive oil | ||
| Salt | 1 To taste | |
| Pepper | 1 To taste | |
| Serve with: a carrot, lettuce, and chicory salad hard boiled eggs | ||
Directions
GETTING READY
1 Shred the pressed, cooked meat as neatly as possible.
2 Trim and peel the onion.
3 Cut lengthwise into quarters and then shred each quarter thinly.
MAKING
4 In a bowl, mix the onion with the meat.
5 Sprinkle with 3 tbsp good quality vinegar.
6 Season with salt and freshly ground pepper.
7 Stir and let stand for 5 minutes.
8 Sprinkle with approximately 1/4 cup olive oil and the parsley.
SERVING
9 Serve at once on individual serving dishes.
