Onion Pickle Recipe
Onion pickle is a savory and spicy pickle recipe made with small onions. This onion pickle or pyaaz ka achar is a peppy pickle recipe spiced with chili pepper, amchoor, cumin, aniseed and mustard amongst others. Sealed with oil and matured for sometime, it is ready to use.
Ingredients

| Coarse mustard powder l0 tsp | ||
| Aniseed powder ; 8 tsp | ||
| White cumin powder 4 tsp | ||
| Spices | 2 Teaspoon | |
| Red chilli pepper 3 tsp | ||
| Salt for onions 7 tsp | ||
| Turmeric | 2 Teaspoon | |
| Onion seeds 1 tsp | ||
| Lemon juice ; 2 (lemons) | ||
| Amchoor | 4 Teaspoon | |
| Salt for the masala 5 to 6 tsp | ||
| Mustard oil | 1 1/2 Cup (16 tbs) | |
| Black salt | 1 Teaspoon | |
Directions
1) Give fine four incisions to each skinned onion keeping their bases intact.
2) Add 7 teaspoons of salt to the onions and keep for 4 hours overnight.
3) Make a smooth paste of the ground ingredients with lemon juice and 1/4 cup of heated and cooled mustard oil.
4) Drain the water generated from the salted onions and add the masala paste.
5) Pour rest of the oil on the onions and 1 teaspoon of salt and keep aside.
