Onion Egg Scramble Recipe
Ingredients
8 ounces firm tofu (soybean curd)
3 large eggs
2 green onions, chopped, or 2 tablespoons snipped fresh or freeze-dried chives
1/2 teaspoon honey
1/4 teaspoon salt
8 drops hot red pepper sauce
Nonstick cooking spray
Directions
1 Place the tofu on paper toweling, press it to blot out excess moisture, then cut into 4 pieces. Place the tofu, eggs, green onions, honey, salt, and red pepper sauce in a food processor or blender. Whirl until smooth.
2 Coat a 10-inch nonstick skillet with cooking spray, then heat it for 1 minute over moderate heat. Add the egg mixture and cook for 5 minutes, stirring occasionally, or until the eggs are set.
