Onion Brown Rice With Carrots Recipe

| Carrots | 1/2 Pound, sliced | |
| Onion | 1 Medium, sliced | |
| Cashews | 1/2 Cup (16 tbs), chopped | |
| 1/3 cup orange-juice concentrate, thawed | ||
| Green onions | 4 , sliced | |
Directions
In a large saucepan, bring water to a boil.
Add rice, butter or margarine, salt, carrots and sliced onion.
Stir and cover tightly.
Cook over low heat until all liquid is absorbed, about 50 minutes.
Stir in cashews, orange-juice concentrate and green onions.
