 Water2/3 Cup (16 tbs)
 Brown rice1 Cup (16 tbs)
 Butter/Margarine1 Tablespoon
 Salt1/2 Teaspoon
 Carrots1/2 Pound, sliced
 Onion1 Medium, sliced
 Cashews1/2 Cup (16 tbs), chopped
 1/3 cup orange-juice concentrate, thawed
 Green onions4 , sliced

Directions

In a large saucepan, bring water to a boil.
Add rice, butter or margarine, salt, carrots and sliced onion.
Stir and cover tightly.
Cook over low heat until all liquid is absorbed, about 50 minutes.
Stir in cashews, orange-juice concentrate and green onions.
