 1 tomato, skinned and chopped
 Bread slice2 , toasted
 2 tablespoons single cream salt and pepper
 2 tablespoons single cream salt and pepper

Directions

Beat the eggs with the cream and salt and pepper to taste.
Melt half the butter in a small saucepan, add the onion and fry until soft.
Pour in the egg mixture and stir slowly over a gentle heat until scrambled.
Stir in the tomato and remove from the heat.
Spread the toast with the remaining butter and pile the scrambled egg mixture on top.
