Ingredients

 
3 medium-sized onions, chopped
 
2 tablespoons butter or margarine
 
2 1/2 cups beef broth or bouillon (canned or freshly made)
 
1/4 teaspoon celery flakes
 
1 medium-sized potato, thinly sliced
 
1/2 cup dry white wine
 
1 1/2 teaspoons white wine vinegar
 
1 tablespoon finely chopped parsley
 
1/2 cup half-and-half {half milk, half cream)
 
Salt and pepper

Directions

Saute onions in butter until soft and golden.
Add beef broth, celery flakes, and potato.
Cover and simmer about 30 minutes or until potato is very tender.
Whirl in a blender until pureed, or press through a wire strainer or food mill; add wine and vinegar.
Bring the mixture to a boil, reduce heat, and simmer about 5 minutes.
Add parsley, cream, and salt and pepper to taste.
Reheat, but do not allow to boil.
