Ingredients
| 4 pork rib or loin chops | ||
| 2 onions, cut in 1/4 inch slices | ||
| 4 potatoes, cut in 1/4 inch slices | ||
| 2 firm red apples, cored and cut in 1/4 inch slices | ||
| 1 large sweet potato, peeled and cut in 1/4 inch slices | ||
| Chicken stock | 1 Cup (16 tbs) | |
| Ground pepper | 1 To taste | |
| Salt | To Taste | |
Directions
Trim some of the fat from chops and place in cold skillet; cook over medium heat for about 3 minutes to render drippings.
Discard trimmings.
Brown chops on both sides in drippings, 3 to 4 minutes on each side, and push to side of pan.
Add onions to pan; cook for about 5 minutes or until tender and translucent.
Add potatoes, apples and sweet potato; toss gently and arrange pork chops on top.
Pour stock over and bring to boil; reduce heat, cover and simmer for 30 minutes.
Uncover and simmer for 5 to 10 minutes longer or until stock is reduced and vegetables are tender.
Season with salt and pepper to taste.
