One Pot Chicken Pilaf Recipe
Ingredients
| Sunflower oil | 1 Teaspoon | |
| Onion | 1 Small, chopped | |
| Skinless chicken thigh fillets - 1 large or 2 small boneless, cut into chunks | ||
| Basmati rice - 1/3 mug | ||
| Chicken stock- 2/3 mug | ||
| Mixed vegetables - 1 mug, frozen | ||
| Leaf spinach - 1/2 mug, frozen | ||
Directions
MAKING
1) In a frying pan, saute the onion in oil for 5 to 6 minutes until softened.
2) Stir in the chicken pieces, saute for another few minutes , until lightly browned.
3) Then stir in the curry paste and rice, saute for another 1 minute.
4) Pour in the chicken stock and add slightly larger pieces of frozen vegetables.
5) Bring to a boil, then cover and cook over a low heat for 10 mins.
6) Then stir in rest of the vegetables and scatter over the spinach.
7) Cover and cook for another 10 minutes, until all the stock is absorbed and the rice is tender.
8) Stir thoroughly and season to taste.
SERVING
9) Serve the One Pot Chicken Pilaf immediately.
