Onam Sadhya Ada Pradhaman Recipe Video
Ingredients
For the Ada:
Rice-1/2 cup
Banana leafs - cut into small portions
Water
For pradhaman :
(makes 2 medium servings)
Ada - 1 cup
Jaggery - 1/2 cup, crushed (or adjust to your taste)
Thick coconut milk - 1 cup
Cardamom - 3 pods, seeds crushed into a powder
Nuts and dry fruits of your choice - 1/2 cup, toasted in oil or ghee
Directions
GETTING READY
To prepare the Ada:
1. Soak rice for about 4 hrs or overnight.
2. Blend in a grinder, and make into a thick paste using very little water.
MAKING
3. To make the ada,
4. Clean and pat dry the banana leaves and spread the batter on top like a dosa, leaving enough space on the corners
5. Roll up carefully and tie with a string
6. Steam for about 10-15 minutes
7. Remove from the streamer using tongs and let cool
8. Once cool, carefully unwrap the leaves and sprinkle with a little water to arrest cooking and prevent the ada from sticking
9. Using a sharp knife start making horizontal and vertical lines on the sheet and remove the little squares carefully. This is our base for the pradhaman.
To make the Pradhaman
10. In a medium size saucepan, bring the jaggery to a boil along with 1/4 cup of water.
11. Filter if you feel there are impurities.
12. Add 1 cup ada and boil for 5 minutes
13. Stir in the coconut milk and let simmer for 5 minutes.
14. Finally add the crushed cardamom and turn of the heat
SERVING
15. Ladle into small dessert bowls.
16. Serve warm topped with nuts and dry fruits toasted in ghee.
