Ingredients

 
3 eggs
 
3 tbsp (50 mL) milk
 
Salt and pepper to taste
 
2 tbsp (30 mL) parsley, minced
 
1 thin slice of ham
 
2 tsp (10 mL) butter

Directions

Beat the eggs and milk together, salt and pepper to taste.
Add the parsley and stir thoroughly.
Dice the ham, removing fat if any.
Stir into the beaten eggs.
Melt 1 teaspoon (5 mL) of the butter in an 8-inch (20 cm) ceramic or Pyrex pie plate 1 minute at HIGH.
Pour in the omelette mixture.
Cover with plastic wrap.
Microwave 30 seconds at HIGH.
Lift wrap and gently stir the cooked part of the omelette, allowing the uncooked part to flow under.
Cover again, microwave 1 minute 10 seconds at MEDIUM.
Let stand 1 minute and serve.
