Ingredients
3 eggs, lighdy beaten
1-2 dashes Tabasco or hot sauce
1/2 teaspoon salt
1/2 teaspoon black pepper
2 teaspoons olive oil
1/4 Spanish onion
1 clove garlic, minced
3/4 cup vegetables, chopped
Directions
1. Whisk together the eggs, Tabasco or hot sauce, salt, and pepper in a medium-sized mixing bowl.
2. Heat a small pan over medium-low heat and add 1 teaspoon oil. When the oil is hot, add onion and garlic, and saute for 10 minutes or until onion is translucent. Add vegetables and cook until soft, about 10 minutes. Put mixture in bowl and allow to cool slightly.
3. Heat a large omelette pan or skillet over medium heat and add the remaining oil. When the oil is hot, add the egg mixture and cook over medium-low heat. Shake the pan so the bottom is coated with egg mixture. When the egg is still slightly runny, add the desired filling. While gently lifting the pan from the heat, fold half of the egg over the other, covering the filling.
3. When ready to serve, slowly tip the pan perpendicular to the plate, allowing the omelette to smoothly roll out.
