Olive Oil Fruit Cake Recipe
Ingredients
| 225 g - 8 oz self raising flour | ||
| 55 g - 2 oz caster sugar | ||
| 125 ml -4 fl oz milk | ||
| Orange juice | 4 Tablespoon | |
| 150 ml - 5 fl oz olive oil | ||
| 115 g - 4 oz mixed dried fruit | ||
| 25 g - 1 oz pine nuts | ||
Directions
In a mixing bowl, sift the flour and stir in the caster sugar.
Pour in the milk and orange juice.
Stir the mixture using a wooden spoon and beat in the flour and sugar.
Pour in the olive oil stirring all the time and mix all the ingredients well together.
Stir in the mixed dry fruit and pine nuts then mix gently together.
Prepare a 18 cm - 7" round cake tin by greasing lightly.
Spoon in the mixture and bake in a pre heated oven.
After about 45 minutes the cake should be golden and firm to the touch.
Leave the cake for a few minutes then transfer to a cooling tray to cool.
