Oldtime Classic Oat Bran Muffin Recipe
This classic oat and bran muffin is a purely healthy muffin recipe taken out of the pages of my time worn family cookbook. Baked with oat bran, brown suagr and raisins, the health quotient of the recipe is not sacrificed on taste. Flavorful hints of cinnamon and vanilla make this reciepe a joy to bake and serve.
Ingredients
| Oat bran | 11/2 Cup (16 tbs) | |
| Buttermilk | 1 Cup (16 tbs) | |
| Egg | 1 | |
| Vegetable oil | 1/3 Cup (16 tbs) | |
| Packed brown sugar | 1/2 Cup (16 tbs) | |
| 1/2 tsp vanilla 2mL | ||
| All purpose flour | 1 Cup (16 tbs) | |
| 1 tsp baking powder 5mL | ||
| 1 tsp baking soda 5mL | ||
| 1/2 tsp salt 2mL | ||
| 1/2 tsp cinnamon 2mL | ||
| Raisins | 1/2 Cup (16 tbs) | |
Directions
In a large bowl, combine oat bran and butter- milk.
Let stand.
In another bowl, beat egg lightly.
Add oil, sugar and vanilla.
Stir into bran mixture.
In another bowl, sift together flour, baking powder, baking soda, salt and cinnamon.
Stir into bran mixture just until moistened.
Fold in raisins.
Spoon batter into prepared muffin tin, filling cups three-quarters full.
Bake in preheated oven for 15 to 20 minutes or until firm to the touch.
