Old World Cioppino Recipe
This Old World Cioppino recipe is a delicious keeper and always a plus in my cookbook! A lip-smacking Side Dish, this Old World Cioppino completes your spread. If you have a lot of seafood on hand then Old World Cioppino is the recipe you should opt for. One trial wont be enough for this Old World Cioppino recipe, I am sure you will be making it again!.
Ingredients
1 Large Onion, sliced
1 Bunch Green Onions, sliced
1 Diced Green Pepper, seeded
1/2 Cup Chopped Parsley
4 Minced Cloves Garlic
1 Cup Chopped Celery
1/3 Cup Olive oil
1 Can (1 Lb.) Tomato Puree
1 Can (8 Oz.) Tomato Sauce
1 Cup Water
2 Cups White or Red Wine
1/2 Tsp. Sugar
1 Bay Leaf
3 Tbs. Salt
1/2 Tsp. Pepper
1/4 Tsp. Tabasco
1/4 Tsp. Rosemary
1/4 Tsp. Thyme
2 Dungeness Crabs
12 Large Shrimp
12 Clams, in shell
12 Oysters, in shell
2 Lobster Tails
White Fish, if available
Directions
In Dutch oven saute onion, green pepper, garlic and celery in olive oil for 5 minutes.
Add remaining ingredients, simmer for 1 hour.
In bottom of large kettle place 2 cracked Dungeness crabs, shrimp, clams, oysters, lobster tails and white fish.
Pour on hot prepared sauce.
Cover and simmer until clams and oyster shells open, 10 to 15 minutes.
Serve with green salad, bread and wine.
