Old Virginia Catchup Recipe
The old virginia ketchup is a tomato and onion ketchup prepared with green tomatoes. Spiced with savory mustard and allspiced along with cloves, the old virginia is a cookd ketchup and can be stored after sealing in the fridge. Flavorful and incrediebly savory, the old virginia ketchup can be used with fish, vegetables or meats.
Ingredients
| Green tomatoes- | ||
| White onions- 1/2 peck | ||
| Salt | 1 To taste | |
| Mustard seed | 3 Ounce | |
| Allspice | 1 Ounce | |
| Brown sugar | 1 pound | |
| Doves | 1 Ounce | |
| Dry mustard | 1 Tablespoon | |
| Water | 1/4 Cup (16 tbs) | |
| Black pepper | 1 Tablespoon | |
| Celery seed | 1 Ounce | |
| Vinegar | 1 Quart | |
Directions
GETTING READY
1.Start by chopping the tomatoes and onions
MAKING
2.Sprinkle the tomatoes and onions with salt, and let stand 3 hours.
3.Drain well and combine pulp with the other ingredients except vinegar.
4.Cover with vinegar, and boil slowly 1 hour.
5.Seal in clean hot jars.
