 Beef shank/Meaty soup bones3 Pound
 Salt3 Teaspoon
 Thyme leaf/Marjoram1⁄4 Teaspoon

 Beef bouillon cubes/2 teaspoons beef bouillon2
 Water2 Quart (8 Cups)
 Potatoes2 Medium, peeled and cubed
 Celery stalks2 , sliced
 Carrots2 Medium, sliced
 Onion1 Small, chopped
 Canned tomatoes16 Ounce, undrained (2 Cups)
 Whole kernel corn12 Ounce, drained, if desired (1.5 Cups)

Directions

In large saucepan, combine first 8 ingredients.
Cover and simmer 2 1/2 to 3 hours or until meat is tender.
Remove beef shank, peppercorns, allspice and bay leaf.
Cut meat from bones and return to soup.
Add remaining ingredients; cover and simmer 30 minutes or until vegetables are tender.
