Old Fashioned Tourtiere Recipe
Ingredients
1 small onion, chopped fine
3/4 tbs shortening 10 mL
1 lb lean ground pork 500 g
1/2 lb . ground veal 250 g
1/3 cup warm water 75 mL
1 tsp salt 5 mL
Ground black pepper
1 tbs mixed herbs: parsley, thyme, sage, rosemary 15 mL
Plain pastry for double crust pie
Directions
Saute onion lightly in fat, then add meat to which the seasoning has been added.
Also add water.
Cook slowly till meat is done—about 25 minutes.
Cool.
Line a pie plate with half the pastry.
Sprinkle lightly with flour, add meat, then top with the other half of the pastry.
Bake for 40 to 45 minutes until golden at 375F (190C).
