Old-Fashioned Split-Pea Soup Recipe

Ingredients
Quick-cooking split green peas - 1 1/2 cups
Fully cooked ham shank - 2 1/2 lb
Onion - 2/3 cup, coarsely chopped
Cut-up carrot - 1/4 cup
Celery - 1/2 cup, coarsely chopped
Parsley sprigs - 2
garlic - 1 clove
Bay leaf - 1, crumbled
Sugar - 1/2 teaspoon
Salt - 1/4 teaspoon
Dried thyme leaves - 1/8 teaspoon
Pepper - 1/8 teaspoon
Clear chicken broth - 2 cans ( 13 3/4 oz)
Directions
MAKING
1) In 3-1/2-quart kettle, combine peas and 1 quart water.
2) Bring to boiling.
3) Lower the heat; cover the kettle and simmer for 45 minutes.
4) Add more water if necessary.
5) Add ham shank and rest of ingredients; cover and simmer for 1-1/2 hours.
6) Remove ham shank from soup; cool; cut ham from bone; dice.
7) Through coarse sieve, press vegetables and liquid.
8) Return to kettle.
9) Add ham; reheat slowly, uncovered, until thoroughly hot, 15 minutes.
SERVING
10) Serve the split pea soup hot along with some bread.
