Old Fashioned Skillet Salad Recipe
Ingredients
2 lb. potatoes
1/3 c. salad oil
3 or 4 tbsp. vinegar
1 tbsp. garlic salt
Dash of pepper
4 to 6 slices bacon
1/4 c. finely chopped onions
1 tbsp. flour
1 tbsp. sugar
1/2 tsp. salt
1 tsp. celery seed
2 tbsp. coarsely chopped green pepper
1 tbsp. coarsely chopped parsley
Directions
Cook potatoes in salted water until tender.
Drain; peel and cut into slices about 1/4 inch thick.
Combine oil, vinegar, garlic salt and pepper.
Set aside.
Fry bacon until crisp.
Drain on paper towel; crumble.
Remove all except 2 tablespoons fat from skillet.
Add 1/2 cup onions; saute until tender but not browned.
Stir in flour, sugar, salt, celery seed and oil vinegar mixture.
Simmer until thickened.
Add potatoes, remaining onions, green pepper and parsley.
Stir together lightly.
Garnish with bacon.
Serve warm.
