Old Fashioned Pork Fruit Cake Recipe
Thanks to my neighbor for sharing this excellent Old-fashioned Pork Fruitcake recipe. It is an effortless Side Dish. Fruits is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. Trust me, you must try this Old-fashioned Pork Fruitcake recipe.
Ingredients
1 lb. fat salt pork, ground
1 c. molasses
1 1/2 tsp. soda
3 eggs, slightly beaten
2 c. sugar
1 lb. raisins
1 lb. currants citron
1/4 lb. orange and lemon peel, chopped
1 c. chopped nuts
1/2 tsp. nutmeg
1 tsp. cinnamon
1 tsp. cloves
5 c. flour
Directions
Pour hot coffee over salt pork; cool.
Add molasses.
Dissolve soda in about 1/4 cup cold water; add to pork mixture.
Add eggs, sugar, fruits, peels and nuts.
Mix in dry ingredients.
Pour into 2 large or 3 small loaf pans.
Bake -at 300 degrees for 1 hour and 30 minutes.
