Ingredients

 
1 cup lightly packed brown sugar
 
4 teaspoons cornstarch
 
6 cups sliced fresh peaches
 
3 whole cloves
 
1 piece (3 in.) stick cinnamon
 
1 1/2 cups sifted all-purpose flour
 
3 tablespoons granulated sugar
 
2 1/2 teaspoons baking powder
 
1/2 teaspoon salt
 
1/3 cup chilled butter
 
1 teaspoon grated lemon peel
 
3/4 cup milk
 
1 1/4 cups light cream
 
2 tablespoons brandy (optional)

Directions

Combine brown sugar and cornstarch in a saucepan.
Stir in peaches, cloves, and cinnamon.
Cook over medium heat, stirring constantly, until mixture is clear and comes to boiling.
Cover and continue to cook over low heat 5 minutes, stirring occasionally.
Remove spices.
Cover and keep warm.
Sift flour, granulated sugar, baking powder, and salt together into a bowl.
Cut in butter until particles are fine.
Add lemon peel and milk; mix lightly with a fork until just combined.
Bring fruit mixture to boiling and pour into a 2-quart shallow baking dish.
Drop tablespoonfuls of batter onto fruit mixture, spacing evenly.
Bake at 400°F about 30 minutes.
Pour cream (mixed with brandy, if desired) over individual servings of warm cobbler.
