Old-fashioned Mincemeat Recipe
Ingredients
| Ground beef | 1⁄2 Pound | |
| Water | 1 Cup (16 tbs) | |
| Cider | 3 Cup (48 tbs) | |
| Brown sugar | 3 Pound (Firmly Packed) | |
| Cinnamon | 1 1⁄2 Teaspoon | |
| Mace | 1 Teaspoon | |
| Salt | 1 Tablespoon | |
| Molasses | 1 Pint | |
| Tart apples | 6 Quart | |
| Seeded lexica/Muscat raisins | 1 1⁄2 Pound | |
| Currants | 3 Pound | |
| Sultana raisins | 1 Pound | |
| Chopped mixed peel | 3⁄4 Pound | |
| Blanched almonds | 1⁄2 Pound, cut fine | |
| Lemon | 3 , juiced and grated rind | |
| Oranges | 3 , juiced and grated rind | |
| Ground suet | 1⁄2 Pound |
Directions
Combine meat and water in a saucepan.
Bring to a boil; then cover, and simmer 10 minutes.
Drain meat, and reserve juice.
Refrigerate meat.
Combine meat juice, cider, 2 pounds of the sugar and the next 4 ingredients.
Bring to a boil, and simmer for 15 minutes.
Remove from heat.
Peel and dice the apples into a large kettle.
Add the meat, remaining sugar and other ingredients.
Add molasses-syrup mixture, and stir well.
Cook for 20 minutes.
Ladle into sterilized sealers, and process in a boiling-water bath for 30 minutes.
