Ingredients

 Ground beef1⁄2 Pound
 Water1 Cup (16 tbs)
 Cider3 Cup (48 tbs)
 Brown sugar3 Pound (Firmly Packed)
 Cinnamon1 1⁄2 Teaspoon
 Mace1 Teaspoon
 Salt1 Tablespoon
 Molasses1 Pint
 Tart apples6 Quart
 Seeded lexica/Muscat raisins1 1⁄2 Pound
 Currants3 Pound
 Sultana raisins1 Pound
 Chopped mixed peel3⁄4 Pound
 Blanched almonds1⁄2 Pound, cut fine
 Lemon3 , juiced and grated rind
 Oranges3 , juiced and grated rind
 Ground suet1⁄2 Pound

Directions

Combine meat and water in a saucepan.
Bring to a boil; then cover, and simmer 10 minutes.
Drain meat, and reserve juice.
Refrigerate meat.
Combine meat juice, cider, 2 pounds of the sugar and the next 4 ingredients.
Bring to a boil, and simmer for 15 minutes.
Remove from heat.
Peel and dice the apples into a large kettle.
Add the meat, remaining sugar and other ingredients.
Add molasses-syrup mixture, and stir well.
Cook for 20 minutes.
Ladle into sterilized sealers, and process in a boiling-water bath for 30 minutes.
