1 pound dried navy beans
 
2 quarts water
 
1 teaspoon salt
 
1/3 cup firmly packed brown sugar
 
1/4 cup molasses
 
1 teaspoon celery salt
 
1 teaspoon dry mustard
 
1/2 teaspoon freshly ground pepper
 
2 large onions, thinly sliced
 
4 slices bacon, cut into 1-inch pieces

Directions

Sort and wash beans; place in a large Dutch oven.
Cover with 2 quarts water.
Bring to a boil; cover, reduce heat, and simmer 2 minutes.
Remove from heat, and let stand 1 hour.
Add salt to beans.
Bring to a boil; cover, reduce heat, and simmer 1 hour.
Drain, reserving 1 1/2 cups liquid; set beans aside.
Combine reserved bean liquid, brown sugar, molasses, celery salt, dry mustard, and pepper; stir well.
Set aside.
Layer half of beans, onion, bacon, and molasses mixture in a 3-quart casserole; repeat layers.
Cover and bake at 300° for 3 to 3 1/2 hours.
