Old Country Mushroom-Barley Soup Recipe
Ingredients
4 cups mushrooms, sliced
1/2 cup pearl barley
1 cup shredded carrots
1/2 cup chopped fresh parsley
1 cup chopped fresh or low-sodium canned tomatoes
1/2 teaspoon black pepper
5 1/2 cups water
3/4 cup chopped celery
Directions
Combine the mushrooms, carrots, tomatoes, celery, barley, parsley, black pepper, and water in a large, heavy soup pot.
Bring soup to a boil, reduce heat, cover pan, and simmer for 1 hour.
