Ingredients

 3 or 4 green to light pink tomatoes
 Flour1/2 Cup (16 tbs)
 1 or 2 beaten eggs
 10 or more crushed soda crackers
 Sugar1 Tablespoon
 Thin slices of cheese
 Salt To Taste
 Pepper To Taste

Directions

Crush crackers with rolling pin.
Mix crumbs with flour on paper towels or a plate.
Beat 1 or 2 eggs, depending on size of tomatoes.
Cut tomatoes in 1/4" slices.
Dip tomato slice into egg, then into crumb and flour mixture, pressing slice down so mixture will cling to both sides well.
Cook tomatoes in skillet with shortening or oil, using medium heat.
Turn when browned.
Sprinkle with salt, pepper and sugar.
After both sides are browned, place slice of cheddar or Velveeta cheese on top of each tomato slice; cover.
Do not continue to cook but set off flame or burner.
Let steam soften cheese.
Serve hot and drain on paper towels.
The greener the tomato, the more tart the taste.
A delicious dish.
