Old Fashioned Turkey Soup Recipe
Ingredients
| Onions | 3 Large | |
| Carrots | 2 Medium | |
| Flour | 1 1/2 Cup (16 tbs) | |
| Light cream | 1 Pint | |
| Turkey | 1 Cup (16 tbs), diced | |
| Celery stalks | 3 | |
| Butter | 1/2 Pound | |
| Turkey stock | 3 Quart | |
| Cooked rice | 1/2 Cup (16 tbs) | |
| Salt | To Taste | |
| Pepper | To Taste |
Directions
Chop onions, carrots and celery very fine.
Cook with a little water for 20 minutes or until tender.
Melt butter, blend in flour.
Heat stock and cream and add gradually to butter and flour mixture, stirring until smooth.
Add vegetables, water and all.
Stir and cook over low heat for 10 minutes.
Add turkey and rice.
Makes 4 1/2 quarts of soup.
