Ingredients

 
1 10-12 lb turkey
 
Stuffing
 
4 bacon slices, diced
 
1 onion, finely chopped
 
5 celery stalks, minced
 
1 1/2 lbs ground pork
 
Salt and pepper
 
1 1/2 cups mashed potatoes, without milk
 
2 tbsp oil

Directions

Preheat oven to 325 °F (160 °C).
Wipe and trim turkey for cooking.
Set aside.
In a casserole dish, lightly cook bacon, onion and celery.
Add pork.
Season to taste.
Cook 30 minutes, draining cooking juices regularly.
Fold in mashed potatoes.
Stuff turkey with hot mixture.
Truss or close with small skewers.
Line a roasting pan with aluminum foil.
Transfer turkey to pan.
Cook in oven 20-30 minutes per 1 lb (450 g).
Remove stuffing from cooked turkey.
Heat in hot oil, if desired.
Transfer turkey to a large serving dish.
