Old Fashioned Refrigerator Date Cookies Recipe
Ingredients
1 1/4 cups whole wheat flour
3/4 cup oat flour
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup honey
1 egg
1/2 teaspoon vanilla extract
1/2 cup finely chopped dates
1/2 cup ground almonds or walnuts
Directions
Sift together whole wheat flour, oat flour, and baking soda in a medium-size bowl.
In a large bowl, beat together butter and honey.
Beat in egg and vanilla.
Gradually blend in flour mixture.
Fold in dates and almonds or walnuts.
Divide dough in half, shape into 2 logs, and refrigerate until firm, about 3 hours.
Preheat oven to 350°F.
Butter 2 baking sheets.
Slice logs into rounds about 1/4 inch thick.
Place 1 inch apart on prepared baking sheets, and bake on middle shelf of oven for 8 to 10 minutes, or until browned.
Cool on wire racks.
