Simple Old Fashioned Pot Roast Recipe

| 2 pounds bottom round of beef | ||
| Potatoes | 12 Ounce, drained | |
| Tomato juice | 1 1/3 Cup (16 tbs) | |
| Onion | 8 Ounce, sliced | |
| Carrots | 1 Cup (16 tbs), shredded | |
| 1 medium green pepper, seeded and diced | ||
| Celery ribs | 2 , diced | |
| Peppercorns | 10 To taste, crushed | |
| Bay leaves | 4 | |
| Salt | 2 Teaspoon | |
| Paprika | 1/2 Teaspoon | |
Directions
Roast beef on a rack at 375°F.
for 45 minutes or until done.
Place in Dutch oven with remaining ingredients.
Cover and simmer 1 to 1 1/2 hours, or until meat is very tender.
Remove beef and potatoes; slice beef.
Transfer 1/2 cup remaining mixture from Dutch oven to blender container and process until smooth.
Return to pot and mix thoroughly.
Divide beef evenly and place each portion on an individual serving plate with 3 ounces potatoes.
Divide sauce evenly and pour over each serving of beef and potatoes.
