Old Fashioned Hermits Recipe
Ingredients
| Margarine | 1/3 Cup (16 tbs), softened | |
| Firmly packed brown sugar | 3/4 Cup (16 tbs) | |
| Egg substitute | 1/4 Cup (16 tbs), frozen | |
| Lemon extract | 1/2 Teaspoon | |
| Vanilla extract | 1/4 Teaspoon | |
| All purpose flour | 1 1/2 Cup (16 tbs) | |
| Baking powder | 1 1/2 Teaspoon | |
| Ground allspice | 1/2 Teaspoon | |
| Ground cinnamon | 1/2 Teaspoon | |
| Ground cloves | 1/4 Teaspoon | |
| Ground nutmeg | 1/4 Teaspoon | |
| 1/4 cup unsweetened apple juice | ||
| Vegetable cooking spray | ||
| 60 raisins (about 1/4 cup) | ||
Directions
Cream margarine; gradually add brown sugar, beating at medium speed of an electric mixer until well blended.
Add egg substitute and flavorings; beat well.
Combine flour and next 5 ingredients, stirring well.
Add to creamed mixture alternately with apple juice, beginning and ending with flour mixture.
Mix well after each addition.
Drop dough by rounded teaspoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray.
Press a raisin in center of each cookie.
Bake at 325° for 15 to 17 minutes or until lightly browned.
Cool slightly on cookie sheets.
Remove from cookie sheets, and cool completely on wire racks.
