 Firm pears - 4
 Tart apples - 4
 Lemon juice1
 Pastry for a two-crust pie
 Dark brown sugar4 Tablespoon
 Flour1 Tablespoon
 Nutmeg1/8 Teaspoon, freshly grated
 Ground cinnamon1/8 Teaspoon
 Rind of orange - 1/2, grated
 Raisins2 Tablespoon, chopped
 Orange juice2 Tablespoon
 Butter2 Tablespoon
 Heavy cream - to serve

Directions

MAKING
1 Peel the apples and pears;coar them and slice thickly.
2 Add a little lemon juice to water and soak the fruits in it.
3 Prepare the pastry using your favourite recipe and line a 9-inch pie dish with it.
4 In a bowl,combine brown sugar, flour, nutmeg and cinnamon, and rub some of this mixture into pastry lining.
5 Add orange rind to the remaining sugar mixture.
6 Spread sliced apples and pears on the bottom of the pastry shell and sprinkle with a few cho pped raisins and some sugar mixture.
7 Repeat the layers until the pie shell is filled.
8 Sprinkle over some orange juice and dot with butter.
9 Fix the top crust over the filling by prssing the edges together or fluting them.
10 Make slits in the crust for the steam to escape and bake at 400 degrees farenheit in the oven for 35 to 40 minutes.


SERVING
11 Serve warm with cream.
