Old Fashioned Cobbler 's Pot Recipe
Ingredients
| Herrings | 2 , pickled | |
| Bacon | 4 Ounce | |
| Onions | 4 | |
| Potatoes | 2 1/2 Pound | |
| Salt | 2 Teaspoon | |
| Black pepper | 1 Teaspoon | |
| Pork roast | 1 1/2 Cup (16 tbs), cut into strips | |
| Sour cream | 2/3 Cup (16 tbs) | |
| Milk | 1 1/4 Cup (16 tbs) | |
| Eggs | 3 | |
| Cheddar Cheese | 1 Cup (16 tbs), grated |
Directions
Cut the herrings into strips.
Chop the bacon.
Peel and thinly slice the onions and potatoes.
Put the bacon in a frying pan and heat until the fat runs.
Add the onion and fry for 5 minutes, then add the potato slices and fry until lightly browned.
Sprinkle over the salt and pepper.
Put a layer of this potato mixture in a greased ovenproof dish.
Mix the pork with the herring.
Spoon on to the potato mixture, then spread over the remaining potato mixture.
Smooth the top.
Mix together the sour cream, milk and eggs and pour into the dish.
Sprinkle over the cheese.
Bake in a moderately hot oven (400° F) for 40 minutes.
Serve hot.
