 1 recipe Rich Roll Dough

 2/3 cup chopped pecans, if desired

Directions

One recipe Rich Roll Dough will make 2 coffee cakes or 1 cake and 1 dozen rolls.
Make Rich Roll Dough according to directions.
After dough has risen until double in bulk, turn out on lightly floured board.
Divide into two portions, round up and cover with bowls and let rest on board 10 minutes.
Roll out each portion to fit a rectangular baking pan (7x 11 x 1 1/2 inches).
Fit dough into greased pans, cover, and let rise in warm place (86° F.) until doubled in bulk, about 1 hour.
Meanwhile, prepare topping as follows: mix sugar, flour, cinnamon and salt together thoroughly.
Work in the soft butter to produce a coarse crumbly mixture.
Stir in the nuts.
Sprinkle over unbaked coffee cake.
Bake in moderately hot oven (400° F.) for 15 minutes; then reduce heat to moderate (350° F.)
