Old Fashioned Chicken And Rice Soup Recipe
Ingredients
1 large Spanish onion, chopped
4 cups White Poultry Stock
4 cups sliced carrots
5 tomatoes, chopped
10 cloves garlic, thinly sliced
1 bay leaf
1 sprig tarragon or 1/4 teaspoon dried tarragon
1/4 teaspoon thyme dash of powdered saffron
1 cup cooked brown rice
4 teaspoons tamari or soy sauce
2 tablespoons minced fresh parsley
Directions
Place the onions with 2 tablespoons of the stock in a large saucepan.
Cook over medium heat until the onions are translucent.
Add the rest of the stock, carrots, tomatoes, garlic, bay leaf, tarragon, thyme, and saffron.
Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
Add rice.
Remove from heat.
Stir in the tamari and parsley.
Cook over medium heat until the onions are translucent.
Add the rest of the stock, carrots, tomatoes, garlic, bay leaf, tarragon, thyme, and saffron.
Bring to a boil, then reduce heat and simmer, covered, for 1 hour.
Add rice.
Remove from heat.
Stir in the tamari and parsley.
