 Baking soda1 1/2 Teaspoon

 Cooking oil1 Cup (16 tbs)
 Vanilla1 Teaspoon
 Eggs3
 Carrots2 1/2 Cup (16 tbs), pared
 Raisins1/2 Cup (16 tbs)
 Walnuts1/2 Cup (16 tbs), chopped
 Cream Cheese Frosting

Directions

Sift together flour, cinnamon, baking soda and salt; set aside.
Combine sugar, cooking oil and vanilla in bowl.
Beat until well blended, using electric mixer at medium speed.
Add eggs, one at a time, beating well after each addition.
Add dry ingredients, carrots, raisins and walnuts to sugar mixture, stirring to blend well.
Pour mixture into greased 12x8x2" (2 qt.) glass baking dish.
Microwave at high setting 12 to 13 minutes, or until top springs back when touched lightly with finger, rotating dish one-quarter turn every 3 minutes.
Cool in dish on wooden board or heatproof surface.
Prepare Cream Cheese Frosting.
Frost cake with Cream Cheese Frosting.
Makes 16 servings.
Cream Cheese Frosting: Beat together 1 (3-oz.) pkg. cream cheese (softened), 3 tblsp. butter or regular margarine and 1 tsp. vanilla in bowl until smooth, using electric mixer at medium speed.
Gradually add 2 c. sifted confectioners' sugar; beat until smooth and creamy, using electric mixer at low speed.
