Old Fashioned Buckwheat Hot Cakes Recipe
Ingredients
| Lukewarm water | 2 Cup (16 tbs) | |

| 1 cup milk, scalded and cooled to lukewarm | ||

Directions
1. Mix together the warm water, yeast, and sugar and stir until dissolved.
2. Sift the buckwheat flour and unbleached flour together and add to the yeast mixture. Stir in the milk and salt. Beat until smooth.
3. Cover and set in a warm place to rise for 1 hour. The mixture will be light and fluffy. Stir well and bake on a hot, oiled griddle until browned; turn and brown the second side.
