Ingredients
2 tbsp vegetable oil
1 5 lb shoulder roast pork
Salt and pepper
2 medium size onions, quartered
1 garlic clove, crushed
1 1/4 cups apple juice
3 medium size potatoes, quartered
6 carrots, cut into sticks
1 small rutabaga, quartered
2 medium size apples, peeled, quartered
Directions
In a cooking pot, heat oil.
Sear roast pork all over.
Season with salt and pepper.
Add onions, garlic and apple juice.
Cover.
Over low heat, cook 2 1/2-3 hours or until meat is tender.
Transfer roast to a serving dish.
Keep warm.
To cooking juices, add remaining vegetables.
Cover.
Cook 15 minutes.
Add apple quarters.
Continue cooking 5 minutes or until vegetables are cooked.
Sear roast pork all over.
Season with salt and pepper.
Add onions, garlic and apple juice.
Cover.
