Old Country Quiche Recipe
Ingredients
| Pastry for single- crust pie | ||
| 1 teaspoon unsalted butter or margarine | ||
| Yellow onion | 1 Small | |
| Shredded Swiss cheese | 2 Cup (16 tbs) | |
| 6 slices lean bacon, cooked and crumbled | ||
| All purpose flour | 2 Tablespoon | |
| Eggs | 3 Large | |
| Milk fat | 1 Cup (16 tbs) | |
| Salt | 1/4 Teaspoon | |
| Ground nutmeg | 1/8 Teaspoon | |
Directions
1. Preheat the oven to 400°F. Line a 9-inch quiche dish with the pastry, flute the edges, fill with dried beans, and bake for 15 minutes or until light brown. Discard the beans and cool on a rack.
2. Mean-while, in a 6-inch nonstick skillet, melt the butter over moderately high heat. Add the onion and saute for 5 minutes or until soft, then transfer to a medium-size bowl. Toss with the cheese, bacon, and flour. Spread in the pie crust.
3. In the same bowl, whisk the eggs with the milk, salt, and nutmeg. Pour over the pie mixture and bake, uncovered, for 35 minutes or until the center is set. Serve with a Chopped Tomato Salad.
