Easy Okra Bowl Recipe Video

A simple to make Okra Bowl recipe. As promised, here is a great dish to go with that Cinnamon Spiced Rice from a few days ago. Although this light Okra Bowl goes great with just about any grain (brown rice, couscous, barley, etc.) it definitely pairs well with the flavors in the Cinnamon Spiced Rice.

Ingredients

 
* 1 tbsp. of extra virgin olive oil
 
* 1 red onion, chopped
 
* ½ a jalapeno, chopped
 
* 2 tsp. of grated ginger
 
* 3 cloves of garlic, minced
 
* 2 tsp curry powder
 
* 1 ¼ cup of chicken or veggie broth
 
* 15oz. can of chickpeas
 
* 16 oz. bag of frozen sliced okra
 
* ¼ cup chopped cilantro
 
* Salt and pepper

Directions

1. Heat olive oil in a large sauté pan over medium heat. Add onions and jalapeno and sauté for two minutes.
2. Stir in garlic, ginger, curry, salt and pepper and saute for another three minutes.
3. Add veggie broth and chickpeas. Turn heat up to high and bring to a boil.
4. Once boiling, stir in okra and reduce heat to med low and simmer for five minutes or until okra is cooked through. Stir in cilantro and serve!! *If the veggie mixture starts to look a little dry, simply add a bit more broth. That African 'Lady Finger' Okra, or lady's finger, is a flowering plant in the mallow family Malvaceae, originating somewhere near present-day Ethiopia. The word okra is of West African origin and is cognate with "ókùrù" in Igbo, a language spoken in what is now known as Nigeria.

Okra or lady's finger is a commonly available vegetable and it is loaded with nutritional values. Here, the chef is preparing a spicy dish of okra by adding some exotic spices like curry powder. This dish is a perfect side dish for rice or barley or couscous.
