Ingredients

 Onion1 , chopped
 Streaky bacon rashers4 , rinded and diced
 Sunflower oil/Olive oil15 Milliliter (1 Tablespoon)
 Okra8 Ounce, cut in chunky slices
 Long grain rice8 Ounce
 Ground cumin1 Teaspoon
 Water1 Pint
 Chicken stock cube1
 Ground black pepper To Taste
 Peeled prawns8 Ounce
 Chopped parsley1 Tablespoon
 Salt To Taste

Directions

In a large pan, fry (saute) the onion and bacon in the oil until just softening, stirring the mixture all the time.
Stir in the okra, rice and cumin and cook for about 1 minute until well coated in the oil.
Add the remaining ingredients except the prawns and parsley, cover and simmer for about 15 minutes.
Add the prawns, cover and cook for a further 5 minutes or until the rice is tender and has absorbed the liquid.
Taste and reseason, if necessary.
Sprinkle with chopped parsley, if using, and serve straight from the pot.
