Ingredients
| Onion | 1 , chopped | |
| Streaky bacon rashers | 4 , rinded and diced | |
| Sunflower oil/Olive oil | 15 Milliliter (1 Tablespoon) | |
| Okra | 8 Ounce, cut in chunky slices | |
| Long grain rice | 8 Ounce | |
| Ground cumin | 1 Teaspoon | |
| Water | 1 Pint | |
| Chicken stock cube | 1 | |
| Ground black pepper | To Taste | |
| Peeled prawns | 8 Ounce | |
| Chopped parsley | 1 Tablespoon | |
| Salt | To Taste |
Directions
In a large pan, fry (saute) the onion and bacon in the oil until just softening, stirring the mixture all the time.
Stir in the okra, rice and cumin and cook for about 1 minute until well coated in the oil.
Add the remaining ingredients except the prawns and parsley, cover and simmer for about 15 minutes.
Add the prawns, cover and cook for a further 5 minutes or until the rice is tender and has absorbed the liquid.
Taste and reseason, if necessary.
Sprinkle with chopped parsley, if using, and serve straight from the pot.
