Okra With Corn And Tomatoes Recipe
Ingredients
| Okra | 1/2 pound | |
| 4 slices bacon, cut into 1/2-inch pieces | ||
| Whole kernel corn | 1 Cup (16 tbs), frozen | |
| Onion | 1/2 Cup (16 tbs), chopped | |
| Salt | 1/4 Teaspoon | |
| 1/4 teaspoon red pepper sauce | ||
| 2 medium tomatoes, cut into eighths | ||
Directions
1. Prepare okra. Place bacon in 2-quart casserole. Cover loosely and microwave on high 4 to 6 minutes or until crisp. Remove bacon with slotted spoon; drain and reserve.
2. Stir okra, corn, onion, salt and pepper sauce into bacon fat in casserole. Cover rightly and microwave on high 12 to 14 minutes, stirring after 5 minutes, until corn is tender.
3. Stir in tomatoes. Cover and microwave 2 to 3 minutes or until hot. Stir in bacon. Sprinkle with freshly cracked pepper if desired.
