1/4 cup butter
 
2 medium green peppers, seeded and diced
 
1/2 cup minced scallions, tops included
 
1 1/2 cups corn cut from the cob
 
1 1/2 cups sliced okra
 
2/3 cup boiling water
 
1/2 teaspoon salt
 
1/8 teaspoon freshly ground black pepper

Directions

1. Heat the butter in a skillet, add the peppers and scallions and saute two to three minutes.
2. Add the remaining ingredients, cover and simmer until the vegetables are tender, about five minutes. Stir occasionally to prevent burning.
