Okra Succotash Recipe
Okra Succotash has a lip smacking taste. Okra Succotash gets its taste from okra cooked with tomatoes and ham. Okra Succotash is inspired by many restaurants around the world.
Ingredients
3 tablespoons lard or fat
1 can corn kernels
1 Ib. fresh or frozen okra, cut up
1 tablespoon minced parsley
2 onions, chopped fine
1 tablespoon minced celery
3 cloves garlic, minced
1 bay leaf, mashed
1/2 Ib. ham, diced
1 sprig thyme, shredded
1 No. 2 can tomatoes or 4 fresh skinned tomatoes
4 tablespoons butter or oleomargarine
1 can butter beans or 1 cup cookgd fresh butterbeans
1/2 teaspoon sugar
Salt and pepper to taste
Directions
Melt the lard in a heavy aluminum pot, add the cut up okra, and fry until the okra is not ropy.
Add the onions and garlic, fry 5 minutes.
Add the ham and tomatoes and fry 5 minutes.
Add all other ingredients and cook 20 to 30 minutes over a medium flame.
