Ingredients

 Bhindi or Okra - 250 grams, Oil - 1 tsp, Red chili - 1, Mustard seeds - 1/1 tsp, red chili powder - 1/2 tsp, turmeric powder - a pinch, salt - to taste

Directions

1. Wash okras well and pat dry. No moisture should be present
2. Slice into thin rounds and keep aside for few minutes.
3. Take a frying pan or tawa, add 1 tsp oil.
4. Add mustard seeds, allow to splutter. Add red chili and fry for 2 secs.
5. Add sliced okras, turmeric powder, red chili powder and a little salt.
6. Cook, stirring continuously, for 8 to 10 minutes till okra turns crunchy.
7. Add more salt, if required and fry for 5 seconds more.
8. Hot okra roast is ready to be served.

Enjoy with rice or rotis!
