Okra Pilaf Recipe
|Bacon slices||4 , chopped|
|Onion||1 Medium, chopped|
|Chopped green pepper||1⁄2 Cup (8 tbs)|
|Tomatoes||2 , peeled, seeded and chopped|
|Sliced okra||1 Cup (16 tbs)|
|Hot cooked rice||1 Cup (16 tbs)|

1)In a large skillet, fry bacons until crisp.
2)Into the same skillet, add chopped green peppers and chopped onion and cook in bacon drippings ove medium heat.
3)Now add, tomatoes and sliced okra and cook until dry.
4)Take the skillet off the heat and stir in cooked rice and pepper.
5)Into the top container of the double boiler, transfer the rice mixture and place boiler over boiling water.
6)Cook for a period of 15 minutes.
7)Once done, stir in the crisp bacon.
8)A complete meal in itself, okra pilaf can be served for lunch or dinner with beer or wine of choice.
