Ogen Melon with Mint Ice Recipe
Ingredients
| Water- 2 cups / 450 ml / 3/4 pint | ||
| Sugar- 1/2 cup / 100 g / 4 oz | ||
| Pared rind and juice of lemons- 2 | ||
| Large handful of fresh mint | ||
| Green food colouring- few drops | ||
| Small ogen melons- 3, chilled | ||
Directions
MAKING
1. In a pot, boil water, sugar and lemon rinds for 5 minutes, onmce boiled remove the pot and add mint to it
2. Put the pot to boil again and add lemon juice, add colouring
3. Chill it in the refrigerator for sometime
4. Take an electri beater, and whisk the mixture properly, chill it again in the refrigertor
5. Take the melons and cut it into half, pour mint into the center of the melons and serve
SERVING
6. Serve with a sauce of your choice or with salads or garlic bread
TIPS
To crystallise mint leaves, pick the small tips of the mint only and brush sparingly with egg white and dip in sugar until completely coated and lay on a metal sheet and freeze until crisp
