1 cup cooked broccoli florets, drained
 
2 teaspoons salt
 
2 teaspoons pepper
 
Dash nutmeg
 
4 soft-set poached eggs, drained on paper towels
 
4 slices bread, made into crumbs
 
2 cups skim milk
 
4 slices hard cheese, 1 ounce each

Directions

Arrange florets in 4 individual ramekins.
Season with salt, pepper and nutmeg: Add a poached egg to each one.
Top with crumbs, pour in milk and cover with cheese.
Bake at 375° F. until piping hot; cheese should be fully melted.
